Ingredients

1 cup, Steel-Cut Irish Oatmeal (dry)
1 cup, quartered or chopped apples with skin
2/3 cup dried, sweetened cranberries (or raisins)
4 tbsp sweetened coconut flakes
2 tsp pumpkin pie spice (or 1 and half tsp cinnamon + 1/2 tsp nutmeg)
4 cups water
2 tbsp unsalted butter
Tips
Keep an eye on the oats as they simmer. They can tend to stick to the bottom of the pot if you don't stir them occasionally.
Directions
1. Bring the water to a rolling boil. Sprinkle the oats into the water, stirring well.
2. When the oats are smooth and beginning to thicken, reduce heat and simmer uncovered for about 30 minutes. At this time, add the apple, cranberries, coconut, spices and butter.
3. Simmer for 30 minutes, stirring occasionally.
