I made these because I really like the Nutrisystem Apple Strudel bar. I wanted something that could be eaten as a bar or muffin. I also wanted something to replace the Optavia and Nutrisystem bars I buy and like.

Ingredients

    1 cup Old Fashioned Rolled Oats Dry
    3/4 cup Wheat Bran - Dry Bob's Red Mill
    3/4 tsp Salt
    1 1/2 tsp Cinnamon, ground
    3/4 cup Plain Nonfat Yogurt Lucerne or Great Value
    1 cup Unsweetened Applesauce Great Value
    3 tsp Lemon Juice 'Real Lemon' 100% juice
    1/2 cup Swerve Confectioners Sugar
    1/2 tsp Vanilla extract, imitation, alcohol
    1 tbsp Water Tap by the Tbsp

Directions

Bar Dough

Mix the following dry ingredients in a medium to large bowl.

1 cup Old Fashioned Rolled Oats Dry
3/4 cup Wheat Bran - Dry Bob's Red Mill
1 ½ tsp Cinnamon
1/4 tsp Salt

Add the following ingredients to the bowl of dry ingredients.

3/4 cup Plain Nonfat Yogurt Lucerne or Great Value
3 tsp Lemon Juice 'Real Lemon' 100% juice
1/4 cup Brown Sugar Replacement Swerve
1 cup Unsweetened Apple Sauce

Vanilla Glaze

Completely mix the following ingredients in a small bowl.

1/2 cup Swerve Confectioners Sugar
1/2 tsp Vanilla extract, imitation, alcohol
1 tbsp Water Tap by the Tbsp

Preheat oven to 375 degrees.

Mix ingredients per instructions above. Divide dough for bars into 6 muffin tins. If your muffin tins are too small to hold 1/6th of the dough then fill 12 muffin tins. In that case, your serving size will be two muffins. Fill each muffin tin with an equal amount of dough. Bake for 30 minutes at 375. Allow to cool on wire rack before cutting or removing bars. Mix vanilla gaze after bars cool. Once cool, remove each bar from muffin tin and tip the top in the vanilla glaze.
