Introduction

This is adapted from a recipe in the book by Dean Ornish 'Everyday Cooking with Dr. Dean Ornish'. His recipe calls for 2 egg whites and I just add 1 whole egg. Ingredients

    1 cup unbleached all purpose flour
    1 cup yellow cormmeal
    2 tbs sugar
    2 tsp baking powder
    1 tsp salt
    1 cup nonfat milk
    1/4 cup unsweetened applesauce
    2 egg white or 1 whole egg

Directions

Preheat oven to 425 degrees F. Spray an 8 inch nonstick pan lightly with nonstick spray. In a medium bowl, stir together flour, cornmeal, sugar, baking powder and salt. Add milk, applesauce, and egg or egg white. Put the prepared pan in the oven to preheat for a minute or 2. Be careful not to overheat since cooking spray burns easily. Stir lightly but do not overmix, just blend. Pour into prepared pan. Bake until top is lightly browned and springs back when touched, or insert toothpick, if clean, it is done. Bake about 20 minutes.
