Ingredients

    1 lb box of fresh Mushrooms, quartered
    1 can Chickpeas (garbanzo beans) (15.5 oz can)
    1 can Coconut Milk (13.66 oz can)
    1 tbsp Curry powder (Penzey's Curry Now)
    1.33 cup, chopped Onions, (1 medium sweet onion)
    1 Tbsp Avocado Oil

Tips

Serve over Vindaloo Quinoa or rice.


Directions

clarify onions in avocado oil, add mushrooms and continue sautéing until reduced by half.
Sprinkle in Curry powder and stir well.
Add Garbanzos and coconut milk and simmer for 10 minutes.
