Ingredients

12 large Egg, fresh, whole, raw
8 oz. Jimmy Dean pork sausage
1 medium onion, diced
4 cloves garlic
1 tsp Thyme, ground (or 1/2 Tbsp. dried)
1 tsp Oregano, ground (or 1/2 Tbsp. dried)
1/2 tbsp Coconut Oil
Directions
Preheat oven to 375°F.
Separate eggs.
Beat egg whites until frothy.
Brown the sausage in a large iron skillet with the onions, garlic, herbs, and spices. Remove from pan and set aside.
Put coconut (or other) oil in skillet and keep it medium-hot.
Whisk the egg yolks and then fold them into the egg whites alternately with the sausage.
Pour the mixture into the medium-hot iron skillet.
Cook 2 minutes over medium heat.
Move to oven and bake 20-25 minutes, until browned on top.
Remove from oven and allow to cool slightly before serving.
Serving Size: Makes 8 servings.
