Introduction

Ingredients

    2 Boneless Skinless Chicken Breast, 4oz, cooked
    1 cup red or green grapes, halved
    2 stalks celery, diced
    1/4 small onion, minced ~ 3 Tbsp
    2 cloves garlic, minced
    3 Tbsp yellow curry powder
    1 cup plain, low-fat yogurt
    1 dash salt
    1 tsp black pepper
    1 tsp ginger root, minced (or 1/2 tsp ground ginger)
    4 leaf or head lettuce leafs, washed for wrapping

Tips

You can really amp up the flavor by adding garam masala and minced jalapeno to the salad.


Directions

1. Dice or shred cooked chicken into 1" pieces.
2. In a bowl combine yogurt, onion, garlic, ginger, salt, pepper and curry powder. Mix to combine.
3. Add in chicken, celery and grapes.
4. Serve alone or wrapped in lettuce leaf.
