Ingredients

For The Dressing
2 1/2 T Raspberry Balsamic Vinegar
6 T Extra Virgin Olive Oil
3 T Honey
1/2 t Dijon Mustard
2 T Shallots (minced)
1/4 t Salt
1/8 t Pepper
For The Salad
6 oz Baby Spinach (About 6 cups)
2 C Fresh Strawberries (stemmed and sliced)
1 C Fresh Blueberries
1/2 C Pecans (chopped)
4 oz Feta Cheese
Directions
For The Dressing
Combine raspberry vinegar, olive oil, honey, Dijon mustard, shallots, salt and pepper in a mason jar or other sealable container. Shake vigorously to blend.
For The Salad
In a large bowl, combine the baby spinach, strawberries, blueberries and pecans. Add the dressing a little at a time and toss until salad is well coated ( you may have some dressing in reserve). Top with crumbled feta and serve.
