Ingredients

    2.25 lb Beef, tip round
    1 cup, chopped Onions, raw
    2 cup, pieces or slices Mushrooms, fresh
    2 tbsp Extra Virgin Olive Oil
    3 cup Beef Broth - Swanson Low Sodium
    4 fl. oz Sherry, dry
    2 tsp, crumbled Bay Leaf
    0.5 tsp Oregano, ground
    0.5 tsp Thyme, ground
    0.5 tsp Salt
    0.5 tsp Pepper, black
    16 tbsp Daisy Light Sour Cream
    0.65 cup Flour - Gold medal all purpose flour

Directions

Heat olive oil and add beef, onions and mushrooms with garlic and cook with the seasonings. Place into greased slow cooker set on high. Add bay leafs (2), beef stock and sherry into skillet and cook until simmering. Stir bottom of pan to remove browned beef and veggies. Add to slow cooker and stir. Cover and cook on high 4 to 5 hours. Add flour to sour cream and stir, fold into beef mixture the last 40 min. Stir and cook 30 to 40 min. Serving Size: 12 1 cup servings
