Ingredients

    0.25 cup Pineapple Juice
    0.75 cup Trader Joe's Coconut Milk Beverage - Unsweetened
    0.5 lime yields Lime Juice
    0.33 cup Dole Pineapple Tidbits 100% Pineapple juice
    75.0 gram(s) Chia Seeds - Semillas de Chia
    0.08 cup Crystalized ginger

Directions

75 g chia seeds = 3 Tbsp .08 c crystalized ginger = 2 pieces, diced tiny Dice the ginger and pineapple to tiny pieces. Mix it all up, let it sit at room temp for 20 minutes, stirring at 10 minutes. Divide into 3 containers and refrigerate. Can be refrigerated for up to a week. Will thicken more the longer it sits, so may need to add more liquid if waiting to enjoy more than a couple days.
