Ingredients

    1 lb frozen corn
    1 1/3 cups whole milk
    1 tbsp butter
    1 tbsp reduced-fat sour cream
    1 bunch scallions, chopped, green and while separated
    5 ounces dry orzo pasta

Directions

1. Boil orzo in salted water.
2. Bring milk, sour cream, and half of the corn to the boil, whisking or stirring steadily. Simmer until thickened.
3. Using a blender, puree corn mixture until thick and evenly liquified.
4. Saute white parts of scallions in butter until softened. Add remaining corn and pan fry until thawed and heated through.
5. Add corn sauce to panfried corn and stir. Simmer.
6. When orzo is almost done, drain, reserving 1/2 cup water. Add orzo to sauce, and simmer until orzo is cooked through, adding pasta water if needed. Salt and pepper to taste, top with thinly sliced scallion greens and serve.

Serves 4-6.

    Incredible!
    Very easy, and the whole family loved it- however DON'T make the mistake of substituting skim milk for whole milk like I did, the consistency was watery. The taste however was very GOOD :) - 6/6/10
