Ingredients

    *3/4 pound skinless boneless chicken breast, cut into 1" cubes
    *2 onions, chopped
    *2 celery stalks, chopped
    *3 garlic cloves, minced
    *1 cup sliced mushrooms
    *1 cup bean sprouts
    *1 cup trimmed snow peas
    *1/4 cup unsalted dryroasted cashews
    *1 Tbsp minced peeled gingerroot
    *1 Tbsp reduced sodium soy sauce
    *3 cups hot cooked brown rice

Directions

1. Spray a large nonstick skillet or wok with non stick cooking spray; heat. Add chicken and cook, stirring as needed, ntil lightly browned, about 3 minutes. Transfer to plate.
2. Spray the same skillet with more nonstick cooking spray; heat. Add onions, celery and garlic, cook, stirring as needed, about 5 minutes.
3. Add the mushrooms, bean sprouts, snow peas, cashews,ginger, soy sauce, and the chicken; cook, stirring as needed, until the chicken is cooked through and the vegetables are tender, 4-5 minutes. Serve the rice, topped with the chicken mixture.
