    1/2 Cup Onions, diced
    1 Clove of Garlic, finely chopped
    1 tsp Olive Oil
    1 (10oz) package of fresh Spinach
    1/2 Cup Fat Free Cottage Cheese
    1 Cup Fat Free Skim Milk
    1/2 Cup Heartsmart Bisquick Baking Mix
    3 Large Eggs
    1 tsp. Lemon Juice
    1/4 tsp. White Pepper
    3 T Parmesan Cheese, grated
    1/2 tsp. Ground Nutmeg
    2 ozs Reduced Fat Feta Cheese


Preheat oven to 350 degrees, Spray a pie plate with non-stick spray. Heat olive oil in a large skillet. Add onions and garlic. Stir until onions are transparent. Stir in spinach. Cook and turn until spinach is wilted. If there is any excess liquid, drain that off. Layer the spinach/onion/garlic mixture with cottage cheese in the pie plate. Beat the eggs, milk, lemon juice, Bisquick and white pepper until smooth with a handbeater or whisk. Pour over spinach/cottage cheese mixture. Sprinkle with crumbled feta cheese, grated parmesan cheese and dust with the nutmeg. Bake 35-40 minutes at 350 degrees or until a knife inserted in the center comes out clean.
