Ingredients

    2 cups frozen corn kernels, cooked
    1 c diced red bell peppers
    1/2c sliced green onions
    1/4 c fresh cilantro, chopped
    1 (14ounce) can black beans, rinsed & drained
    1/4 c red wine vinegar
    1t sugar
    2t canola oil
    1/2t garlic powder
    1/2t ground cumin
    1/2t chili powder
    1/2t black pepper
    1dash salt

Directions

In a medium bowl, combine corn, bell peppers, onions, cilantro, & beans. Mix well.
Whisk together remaining ingredients: toss with bean mixture.
Cover & chill at least 1/2 hour.

    Loved this! Looking for something healthy for the superbowl get together and this worked great. My corn was really sweet so I countered with a the juice of one lime and added guacamole. I also put some warm flour totillas and some cut up chicken breasts for a nice wrap-filling and healthy. YUM! - 2/7/10
