I just made this for lunch and love it!
Gonna throw it on a tortilla with some hummus and lowfat cheese. YUM!! Tonight I will use it as a side salad to go along with fish. It's great. For a little kick I added some finely chopped jalapeno,
I have made a similar salad, and also added lime and cucumbers. I usually salt the cucumbers after I chop them, and keep them in the strainer over a bowl. This allows for the water to drain and it won't make the salad soggy.
