Introduction

Ingredients

1/2 cup, Whole wheat flour
1/2 cup, White flour
1 tbsp, Splenda
1 tsp, Baking powder
1/4 tsp, Baking Soda
1/4 tsp, salt sense
1 cup, 1% milk
1 tbsp, lemon juice
1, egg beaten
2 tbsp, canola oil
Vanilla Extract to taste
1 cup, Fresh Blueberries
Directions
In a mixing glass combine milk and lemon juice; let sit for several minutes.
In a bowl combine all the dry ingredients.
Beat the egg, oil and vanilla together. Add, along with the milk and lemon juice, to the dry ingredients. Mix well until batter is smooth.
Fold in blueberries. Scoop by 1/4 cupfull onto hot greased griddle and cook about 5 miutes per batch. Yields about 9 pancakes. (I have calculated the nutritional value for one pancake!)
