Ingredients

    Oriental Salad/Slaw

    2 pkgs. cole slaw salad mix
    1-2 bunches of green onions-chopped
    1-2 pkgs. edamame, frozen, shelled-defrosted
    1-2 pkgs. shaved carrots (or several whole carrots shaved)

    mix together and set aside

    Sauté the following:

    ½ stick of butter (can substitute 2 Tbl. Olive oil)
    2 pkgs. Oriental Ramen noodles-broken up
    1/3 cup sesame seeds
    1/3 cup sunflower seeds
    1/3 cup slivered almonds

    Dressing:

    ¼ cup white vinegar
    ½ cup vegetable oil
    2 seasoning packets from the Ramen
    ½ tsp. oregano
    ¼ tsp. pepper
    2 tsp. low sodium soy sauce
    ¼ cup sugar (can substitute Splenda for cooking)

    Whisk together and set aside.

    Mix all together and serve. You can add chicken: Marinate in teriyaki sauce, sauté- let cool and chop into bite size pieces and mix in. Another easy and low fat addition is pre-grilled chicken from the deli aisle. Mix and enjoy!
