Introduction

This is an old recipe of mine that I changed to a lower fat version. My husband loves it and likes me to add a small can of jalapeno peppers to spice it up.

Ingredients

    Breakstone Fat Free Sour Cream, 1/2 cup
    Chicken Breast, no skin, 16 ounces
    Onions, raw, 1 cup, chopped
    Spinach, frozen 1 small package
    Green Chili Peppers, canned, 2 cans
    Campbell's Cream of Chicken Soup 1 can
    Cheddar or Colby Cheese, Low Fat, 6 oz

    Doritos 3 oz
    Tostitos Light Tortilla Chips, 3 oz

Directions

Boil chicken breast until done
Cook onion until tender
Add chilies, soup, sour cream thawed spinach, and chicken to pan mix together.
Crush chips and place at the bottom of a 9 x 9
Add mixture on top
Top with cheese
Bake until cheese is melted
Cut into six pieces

    This was very good. Rather than boiling the chicken I made the sauce, poured it over chicken then baked it. The chicken was very moist and had a great flavor. - 3/9/09

    This recipe was a good way to use left over chicken. Boiling the chicken made it lose all it's flavor. I would use the fat free soup to lower the calorie, too. - 6/10/09

    This was really good! Reminds me the spinach/artichoke dip at O'Charley's. I made this for my weight loss group at work and they liked it a lot. I am enjoying trying these recipes and knowing I can look forward to having something besides a baked chicken breast and veggies! - 8/18/11

    Incredible!
    This was very easy to make and had lots of texture. Creamy, crunchy, all in one. You can really add whatever veggies you want and it would be great. I added bell peppers simply because I had some extras sitting around. Will make again. - 2/15/10
