Introduction

This is great in a Pita for lunch or with crackers for a high protein, high fiber snack - soundswierd but is very yummy and filling! This is great in a Pita for lunch or with crackers for a high protein, high fiber snack - soundswierd but is very yummy and filling!
Number of Servings: 6

Ingredients

    2 15oz. cans white or great northern beans
    1 can tuna in water
    1/4 to 1/2 c. chopped red onion
    1 tsp more or less rosemary - to taste
    1 Tbsp. lemon juice
    2 c. fresh spinach or arugula - chopped
    3 whole wheat pitas - halved
    1 sm. cucumber, pared and chopped
    1 Tbsp. light ranch dressing


Directions

Use potato masher or spoon to mash 1 can of the beans. Stir in other can whole.
Add remaining ingredients and mix well - adjust lemon juice and rosemary to taste. Chill.
Serve in a 1/2 pita with cucumber and ranch dressing.
Also works well as a dip with crackers or pita chips.
