Introduction

A quick and easy side dish or appetizer chock full of vitamins and heart-healthy fats. A quick and easy side dish or appetizer chock full of vitamins and heart-healthy fats.

Ingredients

    2 cups fresh spinach
    1 teaspoon olive oil
    .5 oz walnuts or pine nuts, chopped
    1 clove garlic, crushed or chopped
    .5 oz pearled mozzarella or regular mozzarella cut into half-inch cubes
    Salt and pepper

Directions

Heat olive oil in a saute pan over medium high heat. Add garlic and nuts and saute for 2-3 minutes. Add spinach to pan (half at a time if necessary) and saute until just wilted. Season with salt and pepper as desired.

Sprinkle mozzarella balls or cubes over spinach mixture and remove from heat. Let set until mozzarella just begins to melt. Serve as a side dish or with french bread as an appetizer.
