Ingredients

    2 - 4oz fillets of Red Snapper
    1T Olive Oil
    1 Lemon Juiced
    2T Rice Wine Vinegar
    1t Dijon Mustard
    1/4c chopped green onions
    1t ground ginger

Directions

Rinse the fish under cold water and pat dry. Mix the rest of the ingredients. Heat non-stick skillet over medium heat. Brush both sides of fish with marinade. Pour remaining marinade into skillet. Reduce heat and simmer 2-3 min or until fish flakes easily with a fork.

    Easy to make and flavorful. I used white wine instead of vinegar. - 11/3/07
