Introduction
These are made with cooking spray which states there is no fat, calories, carbs, but is made with a soy lecithin. They taste great too! They can be made with sweet potatos also, or a mix of both (which is what I actually did, but couldn't find a raw sweet potato to add as an ingredient). Ingredients

1 large baking potato (6" long)
Organic Extra Virgin Olive Oil Cooking Spray
Salt, pepper to taste
Directions
1. Cut potatoes into thin strips as thin or wide as you like.
2. Lightly spray a large cookie sheet or broiler pan (line broiler pan with foil) with cooking spray.
3. Distribute potatoes into one layer onto pan.
4. Sprinkle with salt and/or pepper to taste.
5. Bake in 400 degree oven for 20-40 minutes, the shorter time for thin, longer for thicker fries, turning potatoes over 1-2 times, until tender.
