Introduction

Ingredients

    1.5 lbs. Chicken Breasts - boneless, skinless
    2 tbs. Olive Oil
    Cooking Sherry
    Italian Seasoning
    Greek Seasoning
    Parsley
    Provolone Cheese (one slice per chicken breast)
    Small Can of Green Giant Mushrooms

Directions

In a casserole dish, add a tablespoon of olive oil and spread it to coat the bottom of the dish.

Sprinkle the Italian Seasoning, Greek Seasoning and Parsley into the dish and then add the chicken breasts.

Dribble the remaining tablespoon of olive oil onto the tops of the chicken and spread to coat - you could just add a little to a paper towel and smear it on there - using less oil.

Sprinkle the Italian Seasoning, Green Seasoning and parsley on the tops of the chicken.

Dribble the cooking sherry over the chicken, cover and bake at 375 degrees for 45 minutes or until chicken is done.

Add the mushrooms to the top of the chicken and then cover with the provolone cheese - 1 piece per breast.

Heat until cheese is melted.

This made 3 servings for my family, but we each had a whole chicken breast at about 6 ounces a piece. You can easily cut back on the calories by cutting the breasts in half.
