Introduction
Delicious carrot dish! Any of the ingredient amounts can vary, depending on what you like. I always go heavier on the ginger and black pepper. Ingredients

Carrots (chopped, peeled, sliced, whole, whatever...), 3 or 4 cups chopped or equivalent.
Ginger Root (grated) or buy the crushed ginger in a jar, 3 tbsp.
Garlic, crushed about 2 or 3 tbsp
Extra Virgin Olive Oil, 2 tbsp
Balsamic Vinegar (I like the White Balsamic available at Trader Joe's), 4 tbsp
A big splash of white wine (keeps it moist, without needing excessive oil; if it reduces too much towards the end, add another splash)
Salt and Pepper
OPTIONAL: Red Pepper Flakes
Directions
1. Heat olive oil and garlic in pan until hot.
2. Add ginger, balsamic, salt, and pepper (optional red pepper flakes for a little "bite"). Stir until even.
3. Add carrots and wine and stir occasionally. Add wine as necessary (the pan shouldn't be too liquidy, but it shouldn't be dry).
Cook until carrots are done (no liquid should be left at the bottom of the pan by this point).
