Introduction

This is what I do with the zucchini overload coming out of my garden This is what I do with the zucchini overload coming out of my garden
Number of Servings: 2

Ingredients

    2 cups shredded zucchini
    .50 cups of diced onions
    1 tsp minced garlic
    6 egg whites
    1 tbsp. olive oil
    1 tbsp. minced fresh parsley
    salt and pepper to taste

Directions

Shred a zucchini with a cheese grater , use the large setting. Dice one half of a large onion. Heat olive oil in frying pan on med heat. Sautee zucchini and onion in pan. Add garlic. While that is sauteeing mince your parsley. In small bowl, whisk together egg whites and chopped fresh parsley salt and pepper. Add to pan and cook until egg is done. Makes 2 servings
