Introduction

Preheat oven to 400. Cook oats and set aside to cool.
Combine Vanilla PP, baking soda, baking powder, and cinnamon.
in separate bowl, wisk/beat egg whites til frothy. add splenda and vanilla, mix for another 30 seconds.
Slowly incorporate the powder mixture into the egg mixture.
Fold in cooked oats and carrots.
line 8x8 baking disk with wax paper and bake for 10-12 mins or until toothpick comes out clean.
