Introduction

Ingredients

1 tsp chili powder
1 tsp cumin
.75 tsp salt
.25 tsp cayenne pepper
4 boneless chicken breasts (I use the Costco ones, ~4oz ea)
.5 c. chopped onion
1 jalapeno pepper, seeded and minced
1 15oz can black beans, rinsed and drained
1.5 c. corn kernels, cooked
.5 c. chopped tomato
2 Tbsp. chopped fresh cilantro
.5 lime, quartered
Directions
Preheat grill (or plug in George Foreman :)
In a small bowl, combine first 4 ingredients (spices). Sprinkle half of the mixture of the chicken, coating both sides.
When the heat is medium to medium-hot, grill the turkey, turning once during cooking -- it will take 15-20minutes on the grill (it only takes 5-7 minutes on the Foreman).
In a medium skillet over medium-high heat, saute the onion and jalapeno in the oil for 2-3 minutes, or until onion softens. Add the black beans, corn, tomato, cilantro and remaining spice mixture. Cook for 5-7 minutes, until mixture is heated through.
To serve, plate chicken and top with warm salsa. Squeeze a lime wedge over each serving.
We like to serve it with rice.
