Ingredients

2 1/2 - 3 lbs (1-1/3 kg) potatoes, cut into small chunks
3 tbsp olive oil
1/8 tsp sea salt
few pinches freshly ground black pepper
1 tbsp mild miso
1/2 tbsp water
1 tsp mild curry paste
1/2 tbsp olive oil (for the paste)
Directions
Preheat oven to 400 degrees F.
In a large bowl, toss the potatoes with the oil, salt, and pepper, then transfer to the baking sheet lined with parchment paper. In another bowl, mix the miso with the water and curry paste until well combined, then stir in the olive oil and set aside (do not add to the potatoes yet). Roast the potatoes for roughly 45-55 minutes, tossing once or twice throughout, until the potatoes are nearly cooked-- just tender and lightly browned. Remove from oven and coat with the miso paste. Return to the oven and roast for another 5 minutes, until the potatoes are nicely browned. Season to taste with additional sea salt and pepper if desired.
Makes 4 - 6 servings as a side dish.
