Introduction

Tasty snack or side dish, great with tortilla or plantain chips.

One of my absolute FAVORITES. A great vegetarian dinner served over rice with tasty hot sauce. YUMMY.

Serves 6 as a side dish/main course.

Ingredients

    * 1 large Pineapple, fresh,
    * 1 medium red onion, minced
    * 1 Jalapeno Peppers,, remove seeds and mince
    * Garlic, 6 cloves, minced
    * Salt, to taste
    * 1/4 tsp ground Cumin or to taste
    * 1/4 tsp ground Cardimon, or taste
    * 1/4 tsp Black Pepper, or to taste
    * 2 tbsp Red Wine Vinegar,
    * 2.5 tbsp Olive Oil,
    * 2 Peppers, sweet, red, fresh, minced
    * 1 lg can Black Beans; rinsed
    * 1 lg can Yellow Sweet Corn, rinsed

Directions

1. Mince onion, red pepper, jalapeno, garlic and add to bowl.

2. Rinse black beans and corn and add to bowl

3. add spices and oil & vinegar

4. Chop up pineapple and add to bowl.

5. Mix well and allow to chill.

6. Goes great with tortilla chips, plantain chips or as a side dish with fish, poultry or pork.

Serves about 12 as a side dish or just put out at a party. Very tasty and very low fat.

    Very Good
    I added cilantro, tomato, and extra peppers. Very good. But I don't really like hot salsa. Folks who want hotter salsa would need to add more hot peppers. - 8/27/10
