Introduction

Stove Top mix is no longer in my pantry. Making stuffing, from scratch isn't that hard to do at all!
Each serving is based on 1/2 cup serving. I don't eat a large mound of this, to watch calories.

NOTE: You can also make this dish in a crockpot, if you have the time.

Ingredients

    4 slices of whole grain bread
    1 Tbsp. olive oil
    1 small onion, diced
    3-4 stalks celery, diced (about a cup)
    1 egg, beaten
    1/2 cup chicken broth
    fresh parsley, chopped (about 1-2 Tbsp)
    1 Tbsp of Bell's Poultry Seasoning (or whatever you like)
    Optional: 1 handful of dried cranberries

    You can take liberties with this recipe by adding fresh mushrooms or any kind of herbs that you like.

Directions

Tear or cut bread into small pieces
Saute vegetables in olive oil until tender.
Add egg, seasonings, parsley and chicken stock.
Carefully and gently combine ingredients; be careful if the vegetables are hot!

Put into a covered casserole dish, sprayed with non-stick cooking spray. Bake at 350F, covered for 20-30 minutes. If you want a crisper stuffing, remove lid of casserole dish for the last 5 minutes or so.
This freezes really well.
