Delicious and just like grandma used to make... only less calories!
These are made using the Large size muffin pans so each portion is hearty and satisfying. Eat this with a dinner salad and some steamed vegetables for a balanced meal.

Ingredients

    Lean ground turkey (1 1/2 pounds)
    Bread crumbs 3/4 cup
    Egg
    Milk
    1 tsp Worcestershire sauce
    1/2 small onion
    1 carrot, peeled and shreaded
    1 small can of Tomato paste
    3/4 Catsup
    2 teaspoons Sugar

Directions

Finly dice 1/2 small onion. Peel then grate 1 medium carrot. In a bowl combine Ground Turkey, Bread crumbs, milk, egg, the onion, the carrot, and 1 tbs of tomato paste, 1 tbs of catsup, 1 tsp Worcestershire sauce (optional).
In a small bowl, combine remaining tomato paste, sugar, catsup for the topping.
Spray non-stick cooking spray into 6 large muffin tins. Place meat mixture into the tins and spread topping evenly over all 6. Bake for 25 to 35 minutes in a 350 degree oven until brown and cooked through.

    Incredible!
    These were a huge hit! Husband really liked it! And he doesn't do meat loaf! He wants to try it with chicken too! I didn't add milk. I also sauteed the onions, carrots, and garlic together b4 putting in mix. I added a dash of red pepper to the meat and to the sauce ontop. Well done! - 3/12/13
