Introduction

Very yummy, low cal, high protein breakfast. Very yummy, low cal, high protein breakfast.
Number of Servings: 4

Ingredients

    1 1/3 c eggbeaters
    1 tbls half and half (fat free)
    1/4 tsp salt
    1/2 tsp oregano
    1/2 tsp pepper
    1 tbls garlic
    2 tbls leeks chopped
    1/4 c parmesan cheese
    1 tbls parmesan cheese
    1/4 c low fat mozzarella
    1/2 c zucchini diced
    1 c spinach fresh
    1/2 roma tomato (seeded)

Directions

Preheat oven to 350 degrees.

Whisk together half and half, eggs and spices in a large bowl. Then mix in leeks and garlic, followed by cheese and lastly the vegetables. Pour ingredients into 4 ramikens then sprinkle top with remaining parmesan cheese.

Bake at 350 for aproximately 30 minutes or until solid.
