Introduction

One of my childhood favorites. My Nana learned it from her mother-in-law in the 1920's. She used 6 bacon strips fried crispy and then sauteed her onion in some of the fat; I've made it a little healthier with the bacon bits and sauteing the onions in a pam-sprayed skillet. Number of Servings: 8

Ingredients

    6 medium potatoes
    1/4 c bacon bits
    3/4 c sliced onion
    2 Tbsp flour
    2 Tbsp sugar
    1 1/2 tsp salt (opt & I didn't include it in the nutrition information because I don't use it)
    1/4 tsp pepper
    3/4 c water
    1/3 c vinegar

Directions

Boil potatoes in skins; cool, peel and slice. Cook onion in pam-sprayed pan until yellow; mix in flour and sugar, then add remaining ingredients. Cook, stirring until mixture boils. Boil one minute. Pour over potatoes and add crumbled bacon, reserving some for garnish. Keep salad warm in a crock pot or over hot water. Serve warm.
Serves 8.

    Very good. I was pleasantly surprised at my first effort at making any type of potato salad. It had a bit of a bit to it, but hubby thought it was good also.
    I used redskin potatoes and didn't peel them either.

    Very good! Reminded me of my time living in Germany. Hubby liked it, and he doesn't like potato salad! Used lowfat turkey bacon, added chopped celery, parsley, and paprika. Left out salt. Will definitely make again soon! - 9/28/09
