Playing around tonight with grapes yielded excellent results! Playing around tonight with grapes yielded excellent results!
Number of Servings: 3

    1 tbsp olive oil
    1-2 tbsp chopped onions
    1 tsp dried rosemary, crumbled
4 oz white wine (I used a chardonnay mini bottle)
3/4 cup rinsed & halved green seedless grapes
    1 tsp cornstarch
3/4 cup low sodium low fat chicken broth
    1 tsp sugar
1/4 tsp salt (or to taste)
    a pinch of pepper
3 6-oz skinless boneless chicken breasts

Season chicken to your liking and grill or broil till done. Keep warm.

To prepare sauce:
Heat olive oil in medium frying pan on medium heat. Add onions, turning temperature down to medium-low and saute until onions are soft and translucent. Add rosemary and wine. Turn heat to medium heat and allow to simmer for 2 minutes.

Add halved grapes and continue cooking for 2-3 more minutes. Remove 1/4 cup of liquid and put into a cup; add cornstarch to this liquid, then add to the pan while stirring constantly. Sauce will thicken. Add chicken broth to thin and add sugar, salt and pepper to taste.

Serve sauce over chicken. Serves 3.
