Introduction

I just wanted to figure out the nutrition info on this. This is super easy and quick. Instead of mashed zucchini, it is 2 cups shredded. I just wanted to figure out the nutrition info on this. This is super easy and quick. Instead of mashed zucchini, it is 2 cups shredded.

Ingredients

    3/4 cup egg substitue
    1 cup unsweetened applesauce
    2 cups Splenda
    2 cups shredded zucchini
    1 TBSP vanilla extract
    1 TSP baking soda
    1 TBSP pumpkin pie spice
    1 TSP salt
    3 cups flour

Directions

Preheat oven to 350 degrees. Mix ingredients in order in a bowl. Bake in 1 greased large loaf pan or 2 smaller ones. Makes about 10 slices in large loaf pan and about 16 between the two smaller loaf pans.
