Introduction

Ingredients

    4 large eggs
    1 16 oz. jar of medium or mild salsa - I recommend Paul Newman's medium chipotle
    2 T reduced fat sour cream
    2 small flour tortillas

Directions

Pour a smoky medium/mild jar of salsa into a sauce pan and heat to boiling (or near boiling). Turn the heat to low, and when the bubbles stop rising, carefully tip in 4 raw eggs. Use a spoon or spatula between them as you pour them in so they stay separate. Cover and simmer on low for 5-10 minutes until the egg whites are set and the yolks are to your liking. (They should be a bit gooey to blend with the sauce when you cut into them.) In the meantime, heat 2 flour tortillas in a frying pan over high heat.

Scoop the cooked eggs and sauce into 2 bowls and top with 1 T sour cream each. Serve with a tortilla on the side to dip.
