Ingredients

    Crust:
    1/3 c. splenda
    1/3 c. plus 1 T. butter, softened
    1/4 t. vanilla
    1 c. Carbquik Baking Mix

    Filling:
    16 oz. Fat Free cream cheese, softened
    1/2 c. splenda
    1 t. vanilla
    2 eggs

    Topping:
    1 c. apples, peeled, cored and sliced
    1/3 c. splenda
    1 t. cinnamon

Directions

Preheat oven to 400 degrees.

Beat first 3 crust ingredients on med. speed; stir in Carbquik until a soft dough forms. Pat onto bottom and slightly up sides of a 9-inch pie pan. Set aside.

Place apple slices in a single layer on a baking sheet. Cover with foil and bake for 15 minutes.

Meanwhile, in a med. bowl, beat first 3 filling ingredients until fluffy. Add eggs; beat on low speed just until combined. Pour into prepared pie pan. Arrange warm apples on top of filling.

In a small bowl, mix rest of topping ingredients. Sprinkle over apples. Bake for 40 minutes, until golden brown. Cool and then chill for at least 4 hours before serving.
