Ingredients

    1 egg
    1 tbsp skim milk
    1/2 tsp vanilla essence
    2 thick slices grainy low GI bread

    Strawberry and Banana Topping
    4 1/2 oz Strawberries, hulled and halved
    1 banana, sliced
    2 tsp pure maple syrup (I used a lite syrup in the nutritional info since that is what we had at home)

Directions

1. To make strawberry banana topping, combine all the ingredients in a small bowl

2, To make french toast, use a fork to whisk together egg, milk and vanilla in a shallow bowl.

3. Heat a large non-stick frying pan over medium heat. Spray with non-stick spray. Dip bread slices in the egg mixture, allowing bread to soak it up. Remove bread, allowing any excess egg mixture to drain off. Cook for approx 2 minutes each side or until well browned. Serve immediately accompanied by fruit topping.
