Ingredients

    ~ 1 package (13.25 oz) whole grain penne pasta
    ~ 1 cup green bell pepper, chppped
    ~ 1 cup onion, chopped
    ~ 1 lb. ground beef (93% lean)
    ~ 1 1/2 tsp. italian seasoning
    ~ 3/4 tsp. ground black pepper
    ~ 1 jar spaghetti sauce (28 oz.)
    ~ 1 can condensed cheddar cheese soup (10 3/4 oz.)
    ~ 2 cups shredded part skim mozzarella cheese (8oz.)

Directions

- preheat oven to 350
- cook pasta according to package and drain
- chop bell pepper and onion
- cook ground beef, pepper and onion in a skillet; drain off fat
- add seasoning, spaghetti sauce and cheddar cheese soup; mix well.
- transfer to baking bowl or casserole dish; mix in 1 1/2 cups of mozzarella cheese
- cover and bake 35 min.
- remove cover and sprinkle remaining cheese over top and bake uncovered for 10 min.
