Introduction

A variation on Banana Muffins with extra Bananas and Splenda vor sweetness. A variation on Banana Muffins with extra Bananas and Splenda vor sweetness.

Ingredients

    6 medium (7" to 7-7/8" long) Bananas, very ripe
    3/4 cup of Splenda
    2 tsp Vanilla Extract
    1/2 Cup Milk, 3.25%
    3 cups Whole Wheat Flour
    1/2 tsp baking powder, low-sodium
    3/4 cup Natural Unsweetened Apple Sauce
    1 tsp Baking Soda

Directions

Preheat oven to 375F
Mash the bananas and add them with all the wet ingredients in a bowl, mix well and add the dry ingredients. Stirring until everything is combined and the dough falls heavy off the spoon.
With two teaspoons ladle the mixture into a nonstick mini Muffin pan, 3/4 full.

Baking time for 24 MiniMuffins is 12 Minutes.

This will make about 48 Muffins. eight of these mini Muffins equal one large Muffin.
