Introduction
This quick and easy recipe is always a hit at my house! I keep most of the ingredients on hand, so I can throw it together any time! It's super cold, too! Ingredients

12 oz whole wheat pasta
2 Tbsp Olive oil
1 medium red onion
1 medium-large red bell pepper
1 medium-large yellow bell pepper
2 cloves chopped garlic
1 pint grape tomatoes
1 can artichoke herats, drained
1 can medium black olives, drained
6 oz reduced fat feta cheese
salt & pepper to taste
Directions
Cook pasta in large pot according to package instructions. Drain and set aside.
Heat 2 Tbsp of olive oil over low-medium heat in bottom of pot. Chop onion, bell peppers into 1" pieces and add to oil. Add chopped garlic and saute until vegetables just begin to soften, but are still slightly crisp. Add grape tomatoes and artichoke hearts, cook until heated through. Toss in olives, feta, and cooked pasta.
Serve warm or cold.
