Ingredients

    1lb extra lean ground beef
    4 pieces whole wheat toast well toasted
    2 egg whites
    garlic and pepper to taste
    4 bell peppers

    1jar tomato sauce
    1 13.25 oz box healthy harvest fusilli

Directions

crumble toast in a bowl with ground beef. Add egg whits and seasoning. Our family likes a little spice so I add one fresh diced jalapeno. shape into 16 little balls and put on cookie sheet sprayed with olive oil. Bake at 350 for about 10 minutes or until no longer pink in the middle.

While the meat cooks I boil the pasta and start to grilling the bell peppers.

Cut the peppers into strips and cook in a pam coated pan until softened but still with a bit of crunch. Add tomato sauce and warm up.

Top pasta with meatballs then top it all off with the tomato sauce. Makes 8 servings each with two meatballs.
