Ingredients

    2 ripe bananas - mashed
    1 1/2 cup whole wheat flour
    1/2 cup unsweetened applesauce
    1 tsp baking soda
    1/2 tsp salt
    1 egg
    2 egg whites
    1 cup splenda or other sugar substitute
    1/4 cup milk + 1 tbsp milk (mixed with 3/4 tsp lemon juice) - let it stand for a few minutes
    1 tsp vanilla extract
    1 cup walnuts

Directions

Mix all wet ingredients.

Add bananas and dry ingredients to mixture.

Spray muffin pan with fat free cooking spray

Bake at 325 (180c) for 20 minutes.
