Number of Servings: 4

Ingredients

    2 cups prepared minute brown rice
    1 cup chunky salsa (medium-hot)
    12 pre-cooked, tail off shrimp
    1/4 tsp each: garlic powder, onion powder
    2 tsp cilatro (I prefer to use 1/4 cup fresh when posible)
    1tsp parsley flakes
    1/4 cup part skim mozerella cheese

Directions

Cook rice according to instructions adding garlic and onion powder, parsely and cilantro into rice before boiling. Rice can be prepared in advance for quicker assembly.
Mean while heat shrimp according to package instructions adding salsa half way through heating process. Add cooked rice to salsa and shrimp and top with mozarella cheese.
I serve with steamed broccoli and orange slices.

    Very Good
    This is a new family favorite! We had it twice last week and we never do that! I added a few jalapenos, 1/2 a can of black beans and 1/2 a can of corn! We just love it! - 8/21/07
