Ingredients

    12 oz pkg large raw shrimp, peeled and deveigned
    1 cup coconut milk
    1 cup coconut, shredded
    2 tblsp corn starch
    1 can pineapple tidbits
    1 cup plain fat free/low fat yogurt
    1/4 cup coconut
    2 tblsp powdered sugar
    2 tblsp coconut milk

Directions

thaw shrimp... combine shrimp and 1 cup coconut milk and marinate in fridge for 1/2 hour... preheat oven to 400... combine 1 cup coconut and 2 tblsp corn starch in bowl... remove shrimp from fridge... dip shrimp in coconut... press to make stick... put shrimp in single layer in sprayed baking pan... bake for aproximately 20 minutes or until golden and done

Pineapple dipping sauce
combine all of the following...
1 cup yogurt
1 can pineapple tidbits
2 tblps powdered sugar
1/4 cup coconut
2 tblsp coconut milk

refrigerate until ready to use.

    Incredible!
    Delicious! My husband still prefers them fried but admitted they were good. The dipping sauce was awesome and there was a bunch left over so we plan to use it over baked chicken or something. We will definitely make this one again! Also, I used a blender on the sauce to get a smooth consistency. - 4/20/11
