The secret to this very simple sauce is the diced salt pork. I got that idea from a jar of Porino's, a local brand of sauce created at the West Valley Inn and marketed throughout Rhode Island. Ingredients

    2 cans good quality tomatoes (I love Sclafani)
    4 oz salt pork cut in 1/2" dice
    3 cloves garlic mashed and chopped (fairly coarse if using a slow-cooker, more fine if for stovetop)

Directions

This is a great slow cooker recipe. Just dump it all in a 4-qt cooker and turn it to high for about 6 hours. If you are going to cook it on the range, use a heavy 3-4 qt saucepan and sautee the salt pork briefly with about a teaspoon of olive oil. Add the garlic and cook just till it softens a bit. Then add the tomatoes and simmer, covered loosely, for about an hour.
