Introduction

This is another family favorite - and so easy to make! YUM! This is another family favorite - and so easy to make! YUM!
Number of Servings: 4

Ingredients

    1 can Cream of Mushroom Soup (low-fat)
    1 soup can 1% milk
    1 packet Lipton Dry Onion Soup Mix
    .75 cup rice
    1 can of mushrooms (4 oz.)
    4 chicken thighs (or breasts)

    *Recipe based on 1960's Betty Crocker cookbook.

Directions

Combine mushroom soup and milk in bowl, reserve 1/2 cup. Add remaining ingredients (reserve 1/2 the onion soup mix). Pour rice mixture into 9x13 baking dish and lay chicken on top.

Pour reserved milk/soup over top of chicken, and sprinkle onion soup mix over the top.

Cover and bake at 350 for 1 hour. Remove cover and back for another 15 minutes or until chicken is done.

We like to serve this with steamed broccoli...mmm!

    Very Good
    Quite good, but I halfed the recipe, and it needs more liquid to balance the onion taste as well as to help cook the rice. I also laid some asparagus spears along the bottom of the pan, that was a nice addition. - 7/29/08

    Very Good
    Recipe meets all the requirements for ease in preparation, taste and nutrition. How about cutting chicken into cubes and multiplying recipe for potlucks.
    If it were just a bit less in carbs, I would have given it a 5 Star rating.
