Introduction

Ingredients

2 TBS olive oil
Green Peppers 1 1/2cups, chopped
Onions, 2 cups, chopped
Carrots, raw, 1.5 cups, grated in food processor
Tomato Paste, 1 can (6 oz)
14 oz can Tomato Sauce
28 oz can Crushed Tomatoes
28 oz can Petite diced Canned Tomatoes
Garlic, minced, 1/4 cup
1 pound Ground Beef (optional)
Portabella Mushrooms, 16 oz, ground in food processor
2-3 tsp Italian seasoning
Directions
Add chopped peppers and onions to large fry pan with small amount of olive oil and saute until soft.
Add grated carrots and continue to saute. Add sauteed vegetables and canned tomato products to crock pot and mix thoroughly. Put crock pot on low set for 6-8 hours.
Add ground beef to fry pan and brown as you break up meat. Drain well in colandar and press down with paper towels to blot more fat. Add back to pan and add garlic and mushrooms. Saute and incorporate meat and mushrooms. (Picky eaters will never know they are in there! ) Add to crock pot. You can even leave the meat out entirely and make it vegetarian. If you don't want to use a crock pot, cook in large dutch oven on the stove top for at least 3 hours. Add Italian seasoning right before serving.
