Introduction

I did this version my 6 qt crockpot, mostly just to let it cook all day. My family likes stuff hot, like SUPER hot, so I use a beef sausage with jalapenos in it, and I sub one can of diced tomatoes for two smaller cans of rotel tomatoes with green chiles in it. Ingredients

    Hillshire Farm Polska Kielbasa, 16 oz (I use jalapeno beef sausages from Sprout's market)
    Beans, red kidney, 3.75 cup (I use red beans for one can and kidney for two)
    V8 juice, 12 oz (I use spicy hot)
    Canned Tomatoes, 4 can (I sub one can of diced tomatoes for two smaller cans of rotel tomatoes with green chiles in it.)
    Pepper, cayenne, 1 tbsp (or to taste, I use 2)
    Garlic, 2 tsp (I use 3)
    Onions, raw, .5 cup, chopped
    Thyme, ground, 1 tsp
    Uncle Ben's Instant Whole Grain Brown Rice, 4 cup (may be cooked separately and served with red beans on top)
    Water, tap, 1.5 cup (omit if cooking rice on the side)

Directions

Slice sausages and fry in sprayed pan just to brown them a bit. Add to crock. Drain and rinse beans, add to crock. Add tomatoes, with juice, and V8. Stir, and add spices. Heat for about an hour, then add water and rice, if desired. Cook another hour or more, until rice is cooked.
OPTIONAL!! Cook rice on the side and omit water from recipe for a more traditional way to serve.
