Ingredients

    4 tsp olive oil
    1 lb chicken breast cut into pieces
    1/2 cup onions chopped
    2 medium carrots chopped
    3 stalks celery chopped
    1 medium sweet potato cut into 2 inch pieces
    1/3 cup pearled barley uncooked
    28 oz container chicken broth
    #Thyme, ground, 1 tsp
    2 cloves garlic crushed
    3 oz white wine

Directions

saute onions, garlic, carrots, mushrooms and celery in 3 tsp olive oil for about 5 minutes, transfer to crock pot. In same pan add remaining 1 tsp oil and chicken and brown, deglazing pan with wine. add meat with broth, thyme and barley to vegetables already in crockpot. Cover and cooke for 4-6 hours until meat is cooked through, veggies are tender and barley has softened and thickened the broth. Serves 6
