Introduction

This is a variation on the Chicken Soup theme. I have added cabbage, ginger, lime and lemon zest, as well as paprika, giving it a rather Pan-European flavor. Ingredients

    3 lbs. boneless, skinless chicken breasts, rinsed and cubed into bite-sized pieces
    10 cups of low sodium, low fat Chicken Stock
    Ginger, fresh, 3-4 small slices
    4 stalks celery with leaves, cut on the bias
    1 bag of baby carrots, rinsed
    4 small onions, peeled and coarsly chopped
    3 garlic cloves, chopped
    2 bay leaves
    1 tsp. fennel seeds, crushed
    1 cup of chopped fennel, fresh
    3 tbsp of fresh parsley chopped
    1/4 cup white wine, added while chicken is sauteeing
    1/4 tsp. salt
    2 tbsp dried dill, crushed
    3 tbsp Hungarian Paprika
    1 can Navy Beans
    Brown Basmati Rice 4 Cups
    1 small head of Savoy Cabbage, shredded

    I'm not a very good cook, can you add a little instruction? You mention sauteeing the chicken with white wine, just add all other ingredients at once? - 10/8/09
